Description

Carrot belongs to the Apiaceae family. Although its leaves can be eaten, it is more commonly grown for its root. The root of wild carrot is white. In cultivated carrot it is red, but it can also be white, yellow or purple. Its color is caused by the presence of β-carotene, which transforms to vitamin A in the body. The carrot is a biennal plant. On the first year it stores nutrients in roots and on the second year it flowers. The seeds carry spines that facilitate dispersal by wind and animals.
