Description

Aspergillus niger is an ascomycete fungus forming black, grainy colonies. It reproduces by conidia (asexual spores). The conidia grow on vesicles at the end of conidiophores 1–3 mm long. A. niger is a pathogen which causes contamination of food. It can even infect humans. On the other hand, it is industrially used for the production of various useful substances, such as citric acid or enzymes. Fermentation by A. niger is used in the making of the pu-erh tea.
