**Information:** Maltose (also a sweetening sugar) is a disaccharide that is formed when combining two α-β-glucose to form α(1→4) glycoside linkages between the first carbon of one glucose and the fourth carbon of the second glucose.

**Use:** It is formed by hydrolysis of starch from the reaction of the enzyme amylase. Further hydrolysis of maltose with the maltase enzyme produces α-ᴅ-glucose, which is a significant source of energy for the human organism.
